Cucumbers, Zucchini, and Squash, Oh My!

In the mood for some good healthy eats while at the Schaumburg Campus? Ditch the fries and chips, and check out the fresh vegetables this week at Food2You, the café at RU in Schaumburg.

Food2You veggiesStraight from the RUrbanPioneers Community Garden on campus, Chef Rommel is including them and the rest of his crop in soups and recipes throughout the harvest season. Food2You is participating in a circle of use that began at RU’s Wabash building, when food and container waste was pulped, composted and eventually returned to the soil at the Community Garden last Spring. Now that’s sustainable.

On behalf of RU students, faculty, and staff, Schaumburg’s Sustainable Future says “Thank you, Food2You,” for participating in the local food movement here at Roosevelt. Look for the sweet, off-the-vine tomatoes — coming soon!
